Our Story

A quiet room. A long counter. Fish that speaks for itself.

UMI began as a single counter in a narrow room on a side street. Chef Yuichi Maetomo had spent fifteen years behind sushi bars in Tokyo and Osaka before he decided to open a place of his own. He wanted a room small enough that he could hand every plate across the counter himself, and look the guest in the eye when he did.

That is still how we work. Every cut of fish is broken down in our kitchen the day it arrives. The rice is polished in house and cooked in small batches so it never sits. The soy is brewed for us by a small maker in Kyoto. We do not have a long menu. We have what is good today.

You can sit at the counter and let the chef decide, or order à la carte from the printed sheet. Either way, you are eating what we would eat ourselves.

Fish first

We buy whole fish from Toyosu and a few small docks along the Pacific coast. They arrive overnight and we break them down in the morning. What is on the counter tonight is what came in this morning.

Rice we polish

We use a single varietal of short grain from Yamagata. We polish it in house to 60 percent, cook it in small batches in a clay pot, and season it with our own red vinegar and salt. We never hold rice for more than forty minutes.

Quiet service

No one will ask you how your first bite is. The chef behind the counter is paying attention and will pace the meal to you. If you want to talk, we will talk. If you want to be left alone with your food, we will leave you alone.

Book a seat at the counter.

Send us a request and we will call you back within the day to confirm. Counter seats go first, so let us know if you would like to sit in front of the chef. Walk-ins are welcome but the room is small and most nights fill up.

Omakase counter

Two seatings nightly, 6:00 PM and 8:30 PM. Eight seats per seating. Reserve in advance.

We confirm every reservation by phone. No deposit required.

A small kitchen is a tight one. The three of us work the counter every night the room is open. You will see us when you walk in.
